Jean-Rock’s Orange Trout Filets

This recipe was submitted by Jean-Rock Boutin of The AIDS Network’s Board of Directors as a part of our A Taste at Home campaign.

 

 

Ingredients

30 ml (1 oz) olive oil

15 ml (1/2 oz) chive chopped

15 ml (1/2 oz) mint chopped

5 ml (1/3 Tablespoon) honey

15 ml (1/2 oz) orange zest (1 orange)

150 ml (6 oz) orange juice (2 oranges)

2 Trout filets (3/5 lbs each)

2 Fennell bulbs

1 Onion

Salt and pepper to taste

 

Instructions

  1. Place the oven grill mid oven. Preheat the oven to 200 C (400 F).
  2. Mix 1 tablespoon of olive oil with, chive, mint, honey, orange zest, and half of the orange juice.
  3. Place the trout filets in a plate and pour the fine herbs and orange juice mix on the fish. Let this macerated a while.
  4. Meanwhile, cut the 2 Fennell bulbs and onion in fine quarters.
  5. In a bowl, mix the Fennell, onion, the olive oil left and the orange juice, salt and pepper to taste
  6. Place the vegetables on a baking tray and bake for 15 minutes.
  7. Get out of the oven and place the trout filets on top of the vegetable, in the middle of the baking tray. Season the trout filets and bake for 10 more minutes.
  8. Plate with orange quarters and basmati rice.
